before christmas, my workplace had a christmas breakfast and did a bad santa gift exchange. if you're not familiar with it, a bad santa exchange is where gifts can be stolen after they are opened, but the gifts in our particular version can only be stolen twice. anyway, my friend andi stole a brownie maker, which, in turn, was stolen from her and thus retired from the game. she was crestfallen when she ended up with a meatloaf maker. since i can always use an extra loaf pan (i mean, who can't, right??), i offered to get her a brownie maker for christmas and she could give me the meatloaf maker. she agreed and so i did and she did. monday night, i made a mushroom cheeseburger meatloaf and it was YUMMY!!! i thought i would share the recipe. :-)
1 lb lean ground beef (2 lbs if you don't want to use any turkey)
1 lb ground turkey breast
1 onion, chopped
1 envelope herb and garlic soup mix (or onion, whichever you prefer)
2 eggs
3/4 cup oatmeal or breadcrumbs
sliced baby bella mushrooms
grated sharp cheddar cheese
pre-heat your oven to 375* f. mix everything together in a bowl, except the cheese and mushrooms. put half of the mixture in the bottom of your loaf pan, being sure to press it up the sides to make a well. put your mushrooms and cheese in the well. cover with the remaining meat mixture, sealing the sides. cover with aluminum foil and place in oven. cook for 45-55 minutes, or until cooked through. let rest for 10 minutes before removing from pan. slice, eat, enjoy!!
i really liked this and it was fairly quick and easy. yay for bad santas who steal brownie makers! :-)
